About the Ramen...

Hakodate Ramen

Hakodate ramen comes from Hakodate the third biggest city in Sapporo. The Hakodate soup has a slightly salty taste. The stock is made from kelp and/or seafood instead of the standard chicken or pork stock to create the traditional Hokkaido flavour.

 

Sano Ramen

Sano ramen comes from Tochigi Prefecture, less than 100 kilos from Tokyo. In Sano, they make noodles by beating them with bamboo stems. As a result, they have a deliciously chewy but soft texture and cook within a matter of seconds. The clear broth has a rich soy sauce flavour, that is distinctive to Tochigi Prefecture.

 

Asahikawa Ramen

Asahikawa ramen is also from Sapporo but is known for its shoyu based broth, unlike Hakodate's salty based broth. Asahikawa ramen can be quite oily and is known for having a thin layer of oil on top of the soup. The ramen noodles are very thin and wavy. 

 

Shinpuku Saikan Kyoto Ramen

This ramen goes back to 1938 and is known as the roots of Kyoto-style ramen. The soup is uniquely black in colour but has a very mild and flavourful taste.

 

Hirugao Tokyo Ramen

Hirugao is a famous restaurant on Ramen Street in Tokyo. The salt-based broth made from chicken, dried sardines, and kaibashira is absolutely delicious. Definitely, a must try for any ramen lover.
